HOME MADE PIZZA

We all love Pizza but as a Take-out it is usually SO expensive and our frugal lifestyle and budget doesn't allow this luxury.

Luckily this easy Pizza recipe has solved our "predicament". ;-)

Now my family looks forward to Pizza night.

EASY PIZZA DOUGH (SCONE MIX)

250g selfraising flour

50g margarine

1/2 tsp salt

1 large egg

3 tbsp milk

Sift the flour and salt into a large bowl and rub the margarine in with your fingers until it has a crumbly consistency.

Make a well in the middle and add the egg and milk.

Mix it until it forms a soft dough, now knead the mixture with your hands until the dough is smooth.

Spread flour onto your work surface, divide the dough in two and roll the dough out thinly.

Place it on two greased baking trays and add your pizza toppings.

PIZZA TOPPING (enough for 2 large pizzas)

5 tbsp Home-made tomato pasta sauce 200g grated cheddar cheese

40g Parmesan cheese

2 cooked chicken breasts, sliced into little blocks

1 cup chopped mushrooms

Fresh rocket leaves

Spread the raw pizza bases with the pasta sauce, then add the rest of the ingredients (except the rocket) on top.

Bake it in the oven at 200deg C for 15 minutes.

Garnish with the rocket leaves and serve with a salad of your choice.
